Nidhi's Eggplant with Tomatos
1 lg, eggplant (cut 1 in. thickness)
3-4 garlic cloves
1 med. onion (diced)
1 tbs. ginger (sliced)
1 chili pepper (fresh)
juice of 1 lemon
2-3 tomatos (chopped)
1 tsp garam masala
1 tbs. coriander powder
1 tbs. tumeric
fresh cilantro (to taste, chopped)
Grilled chopped eggplant in broiler for 10 minutes, turning once.
Saute garlic, onion, ginger and chili pepper over medium heat in a frying pan;
add lemon, add eggplant and tomatoes. Reduce heat, add herbs. Simmer for 10 more min. Serve
with rice and Indian bread. Serves 4.
